Malaysian chicken is a mild curry with coconut, ground almonds, bananas & cream. It is fast & simple to cook which makes it an ideal meal to make if your stuck for time.

Ingredients
  • 2 Chicken Breasts (Diced)
  • 1 Onion (Diced)
  • 1 Tbsp Olive Oil
  • 400g Tin Chopped Tomatoes
  • 1/2 Block Creamed Coconut
  • 1 Tbsp Pataks Chicken Madras Paste
  • ! Tbsp Ground Almonds
  • 1 Tbsp Dark Brown Sugar
  • 1 Tbsp Tomato Puree
  • 150ml Single Cream
  • 2 Banana's (Diced)

Directions
  1. Heat olive oil in a medium sized pan. Add the chicken & onion & cook through until chicken is sealed.
  2. Add the madras paste and stir through so that all the chicken is coated then add the chopped tomatoes, tomato puree, creamed coconut, ground almonds, & dark brown sugar. Bring to the boil then cover & simmer for 30 mins or until chicken is thoroughly cooked.
  3. Stir in cream & chopped banana's & serve with rice of your choice.
