Zucchini Banana Bread

- 4 ripe bananas, peeled shopping list
- ¼ cup brown sugar shopping list
- 3 tbsp Truvia spoonable shopping list
- 1 tbsp honey shopping list
- ⅓ cup salted butter, softened shopping list
- 1 egg shopping list
- 1 tbsp vanilla shopping list
- 1 ¼ cups whole wheat flour shopping list
- ¼ cup rolled oats shopping list
- ¼ cup unflavoured whey protein isolate (optional) shopping list
- ½ tsp baking soda shopping list
- 1 tsp baking powder shopping list
- ¼ tsp cinnamon shopping list
- 1 medium zucchini, grated finely (about ¾ cup packed) shopping list
- ½ cup chopped semi sweet chocolate shopping list
- ⅓ cup chopped walnuts shopping list
- 2 tbsp whole flax seeds shopping list
How to make it
- Preheat oven to 325°F, and grease a 9x5” pan.
- Mash bananas with brown sugar, Truvia, honey, butter, egg, and vanilla until well combined.
- Add the flour, oats, whey isolate, baking soda, baking powder and cinnamon to the wet ingredients stirring just until combined.
- Fold in zucchini, chocolate, walnuts and flax seeds.
- Bake for 75 minutes or until an inserted toothpick comes out clean.
- Let bread cool in pan for 30 minutes before removing.
