How to make it

  • Heat the oil in a large pot over medium heat.
  • Add the onion, leek, celery and carrots. Cook, stirring often, for 8-10 minutes, until onion has begin to colour.
  • Add tomatoes, water, stock, adzuki beans, garlic, sweet potato, herbs and chili powder.
  • Bring to a boil, then reduce heat and simmer, covered, for 45 minutes.
  • Stir in the pasta, peas, beans and turkey.
  • Simmer, uncovered, about 15 minutes, until pasta is cooked.
  • Add salt and pepper to taste, then add lemon zest and juice and serve.
