Apres Holiday Soup

- 1 tbsp olive oil shopping list
- 1 onion, chopped shopping list
- 1 leek, sliced shopping list
- 2 large stalks celery, sliced shopping list
- 2 large carrots, sliced shopping list
- 19 oz no-salt-added diced tomatoes shopping list
- 3 cups water shopping list
- 5 cups turkey or chicken stock shopping list
- 1/2 cup dried adzuki beans, soaked overnight and drained shopping list
- 1 head roasted garlic (about 15 cloves) shopping list
- 1 large sweet potato (350g), peeled and diced shopping list
- 2 tsp dried thyme shopping list
- 2 tsp dried basil shopping list
- 1 tsp dried oregano shopping list
- 1 tbsp fresh rosemary shopping list
- 1/4 tsp ancho chili powder shopping list
- 1 cup multigrain pasta (I used Catelli® Healthy Harvest® Flax Omega-3 rotini) shopping list
- 1/2 cup green peas (fresh or frozen) shopping list
- 175g green beans shopping list
- 285g cooked skinless turkey breast meat, chopped shopping list
- salt and pepper shopping list
- zest and juice of 1/2 lemon shopping list
How to make it
- Heat the oil in a large pot over medium heat.
- Add the onion, leek, celery and carrots. Cook, stirring often, for 8-10 minutes, until onion has begin to colour.
- Add tomatoes, water, stock, adzuki beans, garlic, sweet potato, herbs and chili powder.
- Bring to a boil, then reduce heat and simmer, covered, for 45 minutes.
- Stir in the pasta, peas, beans and turkey.
- Simmer, uncovered, about 15 minutes, until pasta is cooked.
- Add salt and pepper to taste, then add lemon zest and juice and serve.
