- 6 medium potatoes neatly diced into ¼” cubes shopping list
- 1 pound roast beef neatly diced into ¼” pieces shopping list
- ½ pound boiled ham nightly diced into ¼” pieces shopping list
- 2 tablespoons butter shopping list
- 2 tablespoons vegetable oil shopping list
- 2 cups finely chopped onions shopping list
- salt and freshly ground black pepper to taste shopping list

- 2 tablespoons finely chopped parsley shopping list
- 4 fried eggs shopping list
How to make it
- Melt butter and oil in a large heavy skillet and cook diced potatoes over moderate heat for 15 minutes stirring frequently until they are crisp and golden.
- Remove from pan and drain on paper towels.
- Add onions along with a little more butter or oil if necessary and cook until they are soft and transparent but not brown.
- Add diced meats and cook for 10 minutes stirring frequently until meat cubes are lightly browned on all sides.
- Stir potatoes into meat mixture and cook briefly until potatoes are hot.
- Add salt and pepper and sprinkle with the parsley.
- Place individual servings on warm plates and top with a fried egg.
