Mexican Meatball Soup

- 1 lb ground beef shopping list
- 1 tsp garlic powder shopping list
- 1 tsp salt shopping list
- 1 tsp pepper shopping list
- 1/2 cup yellow onion shopping list
- 1/4 cup long grain rice shopping list
- Soup shopping list
- 11 cups water shopping list
- 2 lg tomatoes shopping list
- 1 tblsp salt shopping list
- 1 tblsp olive oil shopping list
- 1/4 cup long grain rice shopping list
- 4 cloves garlic, chopped shopping list
- 2-3 potatoes, cubed shopping list
- 1 large carrot, peeled and sliced shopping list
- 2 celery stalks shopping list
- 1/4 cup tomato sauce shopping list
- 1/4 tsp crushed coriander seeds shopping list
- 4 tblsp chopped cilantro shopping list
How to make it
- make meatballs combine beef with garlic powder, salt, pepper, onions, rice mix and make about 40 meatballs
- Bring water to boil with tsp salt drop meatballs into water and cook for about 10-15 minutes or until they float to the top
- Soup
- In skillet cook rice about 2 minutes, add onions, tomatoes,, garlic and cook for another 3 minutes then add entire contents to meatballs pot, add potatoes, carrots, celery, to pot and simmer over medium heat until veggies are cooked about 20 minutes
- then add tomato sauce, coriander, cilantro and let come to a boil so all the flavors come together about 10 minuted.
