How to make it

  • Put prime rib in pan, fatty side up, mix garlic, olive oil, salt, pepper, thyme and spread mixture over fatty side of meat and let sit out for one hour
  • put oven on 500 degrees for 20 minutes then reduce the temp to 325 and continue roasting for 60-75 minutes internal temp of meat should be 135 degrees for medium rare allow to rest 10-15 minutes before carving
