How to make it

  • Give the potatoes, parsnip, and apples a large dice, and put them into a pot with about a teaspoon of the spice mix
  • Fill the pot with COLD water so that it's just over the potatoes and parsnips; the apples will float
  • Bring to a boil on high medium heat, and add the oil to keep the water from boiling over
  • Cook for 10-15 minutes, until you can put a fork through the potatoes with no resistance and they begin to fall apart
  • Remove from heat and drain the water
  • Mash the potato/parsnip/apple with a potato masher until it's at a nice smooth consistency with no lumps, but don't mash too long or the mixture will get gluey
  • Heat the applesauce and honey, then mix it in
  • Add another tablespoon or two of the spice mix to taste
