Apple N' Spice Mashed Potatoes

- 4 lbs potatoes, peeled shopping list
- 2 lbs apples, peeled shopping list
- 1 small parsnip shopping list
- 3/4 cups unsweetened applesauce shopping list
- 2 tablespoons honey shopping list
- 1 teaspoon oil shopping list
Spice mix
- salt shopping list
- pepper shopping list
- garlic powder shopping list
- turmeric shopping list
- cayenne pepper shopping list
- paprika shopping list
- coriander shopping list
How to make it
- Give the potatoes, parsnip, and apples a large dice, and put them into a pot with about a teaspoon of the spice mix
- Fill the pot with COLD water so that it's just over the potatoes and parsnips; the apples will float
- Bring to a boil on high medium heat, and add the oil to keep the water from boiling over
- Cook for 10-15 minutes, until you can put a fork through the potatoes with no resistance and they begin to fall apart
- Remove from heat and drain the water
- Mash the potato/parsnip/apple with a potato masher until it's at a nice smooth consistency with no lumps, but don't mash too long or the mixture will get gluey
- Heat the applesauce and honey, then mix it in
- Add another tablespoon or two of the spice mix to taste
