Potato Pancakes

- Leftover Mashed Pototoes shopping list
- Chopped onions (optional) shopping list
- Beaten egg shopping list
- flour shopping list
- pepper shopping list
- vegetable oil shopping list
How to make it
- Determine how much of the leftover mashed potatoes you want to use to make potato pancakes.
- We will determine having 4 cups of mashed potatoes.
- Place in a large mixing bowl.
- Add 1 beaten egg, and mix,
- Add 1 medium chopped onion (optional) and blend.
- Add 2 T flour, and mix.
- On a dinner plate or shallow bowl, place a half cup of flour, seasoned if you'd like, for dredging the potato pancakes.
- Add to a medium heated skillet, 3 T oil and a pat of butter and watch so it doesn't burn the butter.
- When a droplet of water sizzles in the pan, you'll know it's ready.
- Fry each side until heated through and golden brown.
- Take potato pancakes out of skillet and place on paper towel on a dinner plate to absord grease.
