How to make it

  • Determine how much of the leftover mashed potatoes you want to use to make potato pancakes.
  • We will determine having 4 cups of mashed potatoes.
  • Place in a large mixing bowl.
  • Add 1 beaten egg, and mix,
  • Add 1 medium chopped onion (optional) and blend.
  • Add 2 T flour, and mix.
  • On a dinner plate or shallow bowl, place a half cup of flour, seasoned if you'd like, for dredging the potato pancakes.
  • Add to a medium heated skillet, 3 T oil and a pat of butter and watch so it doesn't burn the butter.
  • When a droplet of water sizzles in the pan, you'll know it's ready.
  • Fry each side until heated through and golden brown.
  • Take potato pancakes out of skillet and place on paper towel on a dinner plate to absord grease.
