Grated Potato Casserole

When I was a kid, way so far back as I can remember, and yes that was a long time ago, we had this every Thanksgiving and Christmas. It is the best!
Ingredients
- 1 c. milk shopping list
- 3 eggs shopping list
- 1 1/2 tsp. salt shopping list
- 1/4 tsp. pepper shopping list
- 1 c. cubed cheddar cheese shopping list
- 2 tbsp. soft butter shopping list
- 1/2 green pepper, cut up shopping list
- 1 medium onion, quartered shopping list
- 4 medium potatoes, pared and cubed shopping list
- You may also choose to add: shopping list
- green pepper &/or shopping list
- carrot shopping list
How to make it
- Preheat oven to 350 degrees.
- Grease 1 1/2 quart casserole.
- Put all ingredients in blender container in order listed.
- Cover and run on speed 6 (or high) just until all potatoes go through the blades.
- DO NOT over blend.
- Pour into casserole.
- Bake 1 hour.
- Makes 6 servings.
- Yummy!
