Frozen Ginger Lemon Drops

- 1/4 c. lemon juice (I used Myer lemons), coating glass rims shopping list
- superfine sugar, for coating glass rims shopping list
- Frozen ginger lemonade (see below for recipe) shopping list
- 2 cups vodka shopping list
- FROZEN ginger lemonade INGREDIENTS: shopping list
- 1 1/2 c. sugar shopping list
- 3 1/2 c. water shopping list
- 3 to 4 slices (3 1/2 inches long and 1/4 inch thick) peeled fresh ginger shopping list
- 2 c. fresh lemon juice (about 8 lemons) (I used Myer lemons) shopping list
- lemon rounds for garnish shopping list
How to make it
- Directions for FROZEN GINGER LEMONADE:
- 1. Bring sugar and 1 cup water to a boil in a saucepan, stirring to dissolve sugar. Stir in ginger. Remove from heat. Let cool.
- 2. Transfer ginger pieces to a blender with remaining 2 1/2 cups water, and blend until finely chopped. Strain, discarding solids. Pour ginger water into syrup, and stir in lemon juice. Pour into a 9 x 13 inch metal or glass baking pan/dish, and freeze overnight.
- 3. Break frozen mixture into chunks, and transfer to a bowl. Whisk until slushy.
- TO MAKE THE FROZEN GINGER LEMON DROP:
- Dip rims of glasses in lemon juice and then in sugar. Pour 3/4 cup frozen ginger lemonade into each glass, and top with 1/4 cup vodka (to taste). Serve immediately garnished with a lemon curl.
