How to make it

  • Heat olive oil in a large skillet over medium-high heat. Chop garlic cloves and add the saute for about 1 minute.Add salt and spinach and saute for about 3 minutes or until spinach wilts. Place spinach mixture in a colander, pressing until mixture is barely moist.
  • Place spinach mixture, basil, cream cheese, and pepper in a food processor; process until smooth. Spoon mixture into a decent sized bowl. Cut lime in half then squeeze the juice from the lime into the mixture and add yogurt and parmesan cheese. Stir the mixture, and then chill.
