How to make it

  • In a large bowl (or the bowl of a stand mixer fitted with the dough hook), combine the yeast, flour, bulgur and sesame seeds.
  • Whisk together the ricotta, honey, sesame oil, milk and salt and add to the flour mixture.
  • Knead for 10 minutes on low speed, or by hand for 12 minutes.
  • Cover and let rest for 40 minutes.
  • Deflate dough, shape into a loaf and place in a greased 9x5” pan.
  • Cover and let rise 1 hour.
  • Preheat oven to 450F.
  • Place loaf in the oven and immediately reduce the temperature to 375F.
  • Bake for 40 minutes, until hollow sounding inside. Tent with foil after 20 minutes to prevent over-browning.
