Croatian Fish “brodet”

- 1000 g of various fish (cod-fish, sea-bass and similar, or crabs, shrimps etc.) shopping list
- 3 tablespoons olive oil shopping list
- 500 g onions, finely minced shopping list
- 3 garlic cloves, finely minced shopping list
- 1 bay leaf shopping list
- fistful of raisins shopping list
- 1 tablespoon vinegar shopping list
- 0,5 l strained tomato, or 3-4 whole fresh tomatoes very finely minced shopping list
- salt, pepper, parsley leaves, sugar shopping list
How to make it
- For this meal you have to have large round pot with low rim.
- Put olive oil in a pot and sauté the onion until it is soft. Put fish (if it is too big cut it in portions), fry very shortly, add garlic and bay leaf. DO NOT STIRR with any kind of ladle, just shake the whole pot.
- Add vinegar, cook gently for 2 more min, and add tomato, salt, pepper, raisins and water to cover fish.
- Cook open for 50-60 min. Add water if evaporates too quickly. Try it: if it's too sour, add sugar. At the end add parsley leaves and some more olive oil. Serve with hard corn-mush (palenta, as we say).
