How to make it

  • Pour 1/2 cup water into a small pot, and add cabbage until the water just barely covers it all. Boil for 10 minutes until the water is a dark purple, then reserve. Cabbage leaves can be discarded, served on the side, or pickled.
  • Meanwhile, melt butter in a large saucepan. Add shallots, garlic, banana, and lavender. Saute until bananas have started to break down.
  • Whisk in flour, cook for another minute until it turns a nutty brown.
  • Whisk in milk a little at a time, and bring to a boil.
  • Add cabbage dye and stir to combine. Reduce heat.
  • Add plenty of salt to taste.
