Chicken Satay Pita

- 3 or 4 romaine leaves, torn shopping list
- 1/4 cup chopped celery, chopped shopping list
- 1/4 cup onions shopping list
- 1/4 cup chopped red bell pepper shopping list
- 1/4 cup low-sodium vegetable broth shopping list
- 1/2 whole-grain pita shopping list
- 3 ounces cooked boneless, skinless chicken breast, diced shopping list
- 2 tablespoons natural peanut butter shopping list
- 1/4 teaspoon minced garlic, shopping list
- 1/8 teaspoon freshly grated ginger shopping list
- dash crushed red pepper shopping list
How to make it
- On the stove top over medium heat, saute the peppers and onions in the broth until tender, and set aside. Mix the garlic, ginger, and crushed red pepper into the peanut butter, and toss with the diced chicken. Fill the pita with the chicken, sauteed vegetables, chopped celery, and romaine.
