How to make it

  • Preheat the oven to 450 F.
  • Lay the pita, outer side facing up, on a piece of foil and rub with half the olive oil. Saute the spinach, peppers, and onions with the garlic, herbs, and the remaining olive oil. Top pita with the spinach mixture and then the shrimp, and garnish with the minced sun-dried tomatoes. Bake at 450'F for five to eight minutes.
