Black Bean Tacos With Cilantro-jalapeno Guacamole

- 1 cup fresh mushrooms, chopped shopping list
- 1/2 cup fresh spinach shopping list
- 1/2 cup onions, any type, diced shopping list
- 1/4 cup low-sodium vegetable broth shopping list
- 2 soft taco-size whole-corn tortillas shopping list
- 1/2 cup canned, rinsed black beans shopping list
- 1/4 medium avocado, mashed shopping list
- Dash freshly ground cracked black pepper shopping list
- 1 teaspoon fresh, chopped cilantro shopping list
- 1 small jalapeno, diced shopping list
- wedges of fresh lime shopping list
How to make it
- Mix the pepper, cilantro, and jalapeno into the avocado to make a guacamole, and chill. On the stove top over medium heat, saute the vegetables in the broth until tender. Warm the tortillas, fill them with the black beans and sauteed vegetables, garnish with freshly squeezed lime juice, and top with the guacamole. Serve any extra vegetables on the side.
