Sugar - Free Blueberry Yogurt Truffles

- ¼ cup blueberries (fresh or frozen and thawed) shopping list
- 8 packets stevia (I use PureVia) shopping list
- ¼ cup non-fat plain Greek yoghurt (or yoghurt-with-variations.html">yoghurt With Variations) shopping list
- 1/2 cup unsweetened cocoa shopping list
- 125g stevia-sweetened chocolate (I use CocoPolo) shopping list
- 3 tbsp unsweetened cocoa powder shopping list
How to make it
- Microwave the blueberries and stevia together in a small dish until berries burst, about 1 minute. Cool slightly and stir into yoghurt. Stir in the cocoa powder and set aside.
- Melt chocolate in a separate microwave-safe bowl, stirring frequently.
- Let cool for 2 minutes.
- Fold in the yoghurt mixture.
- Cover and chill 30 minutes, or until it firms up but is still shapeable.
- Shape mixture into small balls and roll in the 3 tbsp cocoa powder.
- Place onto lined baking sheets and refrigerate until ready to serve.
