Lemon Maringe Pie

- crumb crust or 9 inch pastry shell shopping list
- 1 envelope unflavored gelatin shopping list
- 1/4 cup cold water shopping list
- 1 lemon shopping list
- 4 eggs shopping list
- 1 cup sugar shopping list
- 1/4 teaspoon salt shopping list
How to make it
- Preheat crust.Bake and let cool.
- Soften gelatin in cold water for 5 minutes,then dissolve over hot water.Cut peel from half of lemon, longwise.Discard this peel.Cut the lemon in 8 small pieces and remove the seeds.Add a few pieces at a time to the blender.Cover the container and let it run.Add pieces of lemon until all have been cut very fine.Stop the blender and scrape down the sides.Add the dissolved gelatin.Start the blender.Add the egg yolks one at a time.Add 1/2 cup sugar and the salt.Blend until the sugar is dissolved.Pour the mixture into a small bowl and chill until partially set.
- Beat the egg whites in an mixing bowl until they stand in soft points when the beater is removed.Gradually add the remaining 1/2 cup sugar to the egg whites and beat until stiff peaks are formed.Fold semi - thickened gelatin into egg whites.Pour into the pie shell.Chill until firm.Makes 6 servings (I think you may round up getten two extra seervings).
