How to make it

  • Preheat oven to 350 degrees
  • Steam broccoli with a little water for about 6 -7 minutes
  • When broccoli is cooked, crumble into smaller pieces and add olive oil, salt and pepper. Mix well.
  • Spray a non-stick cupcake tin with cooking spray and spoon broccoli mixture evenly into 9 tins.
  • In a medium bowl, beat egg whites, eggs, cheese, sale and pepper. Pour into greased tins over the broccoli until a little more than 3/4 full. Top with grated cheddar (note: I did not have any grated cheddar - did not miss it). Bake in oven approximately 20 minutes or until a knife inserted in middle of a "muffin" comes out clean. Serve immediately. You can make ahead of time and keep in refrigerator to enjoy another day.
