Broccoli & Cheese Mini Egg Omelets

- 4 cups broccoli florets shopping list
- 4 whole large eggs shopping list
- 1 cup egg whites shopping list
- 1/4 cup reduced fat shredded cheddar shopping list
- 1/4 cup good grated cheese like pecorino romano shopping list
- 1 tsp olive oil shopping list
- salt and fresh pepper shopping list
- cooking spray shopping list
How to make it
- Preheat oven to 350 degrees
- Steam broccoli with a little water for about 6 -7 minutes
- When broccoli is cooked, crumble into smaller pieces and add olive oil, salt and pepper. Mix well.
- Spray a non-stick cupcake tin with cooking spray and spoon broccoli mixture evenly into 9 tins.
- In a medium bowl, beat egg whites, eggs, cheese, sale and pepper. Pour into greased tins over the broccoli until a little more than 3/4 full. Top with grated cheddar (note: I did not have any grated cheddar - did not miss it). Bake in oven approximately 20 minutes or until a knife inserted in middle of a "muffin" comes out clean. Serve immediately. You can make ahead of time and keep in refrigerator to enjoy another day.
