How to make it

  • Prepare you matzoh balls and set aside
  • Cook sweet potatoes tender but not overly soft and set aside
  • Cook carrots and set aside
  • Soften prunes in boiling water and drain and set aside
  • Then in a large casserole dish place the cooked sweet potatoes, carrots ,prunes and crushed pineapple.
  • Sprinkle with brown sugar, salt and pepper to taste
  • Add the matzoh balls and pour on the reserved pineapple juice
  • Bake in a 350F about 30- 40 minutes until well heated, basting several times.
