How to make it

  • Heat 2 tablespoons of the butter in the saucepan over medium heat and saute the onion for 3 minutes, until it is limp and translucent. Add the garlic and continue to saute for 1 minute.
  • Add the remaining 6 tablespoons butter, the ginger, curry, and salt to the saucepan and blend the ingredients with a wooden spoon. Simmer the butter over medium-low heat for 4 minutes to meld all the seasonings.
  • TO SERVE:
  • Brush the buns with the butter mixture.
  • DO-AHEAD: The butter can be prepared 3 days in advance, cooled to room temperature, and stored, covered, in the refrigerator.
  • VARIATION:
  • Substitute pita pockets for the hamburger buns.
