Asian Pear And Ricotta Coffee Cake

- 2 tbsp ground flaxseed shopping list
- ¼ cup hot water shopping list
- ¼ cup melted butter shopping list
- 1 cup full-fat ricotta cheese (I used Richer Ricotta) shopping list
- ½ cup whole milk shopping list
- 1 tsp vanilla shopping list
- ¾ cup flour shopping list
- ½ cup spelt (or whole wheat) flour shopping list
- ½ cup sugar shopping list
- 2 ¼ tsp baking powder shopping list
- ½ tsp cinnamon shopping list
- ½ tsp cardamom shopping list
- ½ tsp salt shopping list
- 1 large Asian pear, peeled and chopped shopping list
How to make it
- Preheat the oven to 400 F and grease an 8” pan.
- In a bowl, whisk together the flaxseed and hot water. Set aside for 10 minutes.
- Beat in the butter, ricotta, milk and vanilla until well combined.
- Stir in the flours, sugar, baking powder, cinnamon, cardamom and salt, then fold in the Asian pear.
- Bake for 25-30 minutes or until toothpick comes out clean.
- Cool completely in the pan.
