Green Velvet Cake

- 3 eggs shopping list
- 2 tbsp vanilla shopping list
- 1 ½ cups Sucanat (or sugar) shopping list
- 1 ½ cups fresh radish greens, beet greens or spinach shopping list
- ½ cup canola oil shopping list
- 1/3 cup unsweetened applesauce shopping list
- ½ tsp green food colouring (optional) shopping list
- 1 tbsp lemon juice shopping list
- 1 cup flour shopping list
- 1 cup whole wheat pastry flour shopping list
- 1 pkg instant vanilla pudding mix shopping list
- 1 tbsp baking powder shopping list
- ½ tsp baking soda shopping list
- ½ tsp salt shopping list
- frosting or icing sugar, for decoration (I suggest a not-too-sweet vanilla or cream cheese frosting) shopping list
How to make it
- Preheat the oven to 350F and grease a 9x13” pan.
- In a food processor, combine eggs, vanilla, sucanat or sugar, greens, oil, applesauce and lemon juice. Process until smooth.
- Add the flours, pudding mix, baking powder, baking soda and salt. Pulse to mix in.
- Bake for 30 minutes.
- Cool in the pan before frosting or serving dusted with icing sugar
