Rocket Salad With Parmesan Cheese Recipe

Serve with crusty bread or breadsticks
Ingredients
- 8 cups rocket leaves, torn into pieces shopping list
- 200g cherry tomatoes, halved shopping list
- 100g sun-dried tomatoes, cut into strips shopping list
- 100g parmesan shavings shopping list
- 50g roasted hazelnuts, chopped shopping list
- salt and black pepper to taste shopping list
Balsamic Dressing
- 50ml olive oil shopping list
- 50ml balsamic vinegar shopping list
- 1 tbsp Dijon mustard shopping list
- salt and black pepper to taste shopping list
How to make it
- Combine rocket leaves,cherry tomatoes, sun-dried tomatoes, salt and pepper in a bowl.
- Combine ingredients for dressing in a jar, close tightly, shake well.
- Pour over salad and toss.
- Serve garnished with shaved parmesan and chopped hazelnuts.
