How to make it

  • ~ Fever Pitch ~
  • In a cocktail shaker, muddle basil leaves and sugar very well.
  • Add cachaca, pineapple juice, lime juice, Chartreuse and egg white and dry shake (without ice) until well combined.
  • Add a handful of ice and shake like you mean it for a solid minute or so.
  • Strain into a chilled cocktail glass and top with celery bitters.
  • Garnish as desired.
  • ~ Humble Pie ~
  • Combine ingredients in a stirring vessel,add ice,stir until ingredients are incorporated and mixture is chilled,strain over fresh ice,and garnish with candied ginger.
  • Ginger syrup:Equal parts cane sugar and ginger juice...by volume...Soak the raw ginger in warm water.Peel the ginger...the back of a spoon works really well...Run the peeled raw ginger throught an extractor.Strain the ginger juice and add sugar.Stir until incorporated.
  • Rich Demerara Syrup: Two parts demerara sugar to one part warm water...by volume...Boil water.When the water reaches a boil,remove from heat.Add sugar and stir until fully incorporated.
