  • In bowl combine the flour,salt,and sugar,with your finger tips add small chucks of butter,work the butter into the dry mixture until it's shaggy around the edges,and teeny bits of butter still show,taking your hand, push the flour away from itself and then add the sour cream in the valley,you may wish to use a fork to mix the sour cream with the flour.When the cohesion and adhesion occurs bringing it into a mass,then divide and conquer,shaping each mass into a disk,wrap in glad wrap,chill an hour or over night.While the crust is chattering in the cold,peel,core,and slice the apples,rain down upon them with the apple cider so the cut edges do not turn.Combine the flour,sugar,and spice together in a bowl,shower the apple slices with the flour mixture,and using your hands...for it is therapeutic,feeding,and filling the soul as you go bringing it all together,sprinkle the apple brandy,vanilla and almond over and massage in.Remove the crust from the cooler,dash flour across the counter top with abandon, and with a cloth coverd rolling pin,roll each disk to approximately a twelve inch circumference.Line and press gently into a nine inch pie dish.Give the apple a tumble into the lined pie dish,and heap them in the middle.Lay atop the apples the other rolled out disk.Trim,fold,pinch,and crimp.Cream the egg,and brush the cover covering the apples,then make slits to allow the steam to dissipate in the atmosphere.You have already had your oven heated to three hundred seventy five degrees.Place completed pie onto an oven grate that has been positioned two thirds down in the oven,allow another grate benight to hold a companion pan so as to catch any volcanic eruptions of the center core.Bake at this temperture for about twenty minutes,or,until the top takes on a nice tan,then lower the heat to three hundred and fifty...Do not open the door and peek just gaze into the glass.and comtinue to bake an additional forthy five minutes.You can however check on the process to see that the juices are bubbling and if need be, foil the attempt of the crust to over extend itself to the heat and deepen in shade.Transfer the apple pie to a cooling station and allow to cool down for about an hour,but still want it slightly warm before you put it into service with a scoop of creamy ice cream.Fresh coffee,a tall glass of cold milk,or,a tad of apple brandy would be nice as a partner to keep this fragrant pomaceous pleasure company.
