Vegetarian Kimchi Fried Rice (bokkeumbab)

- 6 cups cooked rice (the older the better) shopping list
- 2 cups kimchi, cut into small pieces shopping list
- ½ zucchini, diced shopping list
- 3, 4 garlic cloves, minced shopping list
- 2 green onions, finely diced shopping list
- 4 eggs, sunny side up shopping list
- 2 tbsp sesame oil shopping list
- 2 tbsp soy sauce shopping list
- 1 tsp sesame seeds shopping list
- 1 tbsp sugar (if using older kimchi) shopping list
- 2 tbsp olive or vegetable oil shopping list
How to make it
- After washing the zucchini, cut into small cubes along with the kimchi.
- Heat 2 tbsp. olive oil in a non-stick skillet over medium-high heat. Saute the diced zucchini, kimchi, and garlic for about 10 minutes.
- Next, add leftover rice, sesame oil, and soy sauce to the kimchi. Mix well and stir fry for another 5 minutes. If needed, add some sugar to balance out ripened kimchi. Set aside on a serving platter or individual dish.
- In the same non-stick frying pan, make 4 sunny side up eggs. Top on fried rice, garnish with sesame seeds, and enjoy!
