Spaghetti Squash With Meat Sauce

- 1 or 2 spaghetti squash, cut in half shopping list
- Olive oil shopping list
- 1 cup plus extra for topping, parmesan cheese, shaved or shredded shopping list
- 1 jar Prego Vodka sauce shopping list
- 1 pound lean ground beef shopping list
- 1 cup chopped mushrooms shopping list
- butter( 1 tablespoon cubed for squash plus 1/4 cup melted) shopping list
- Salt and pepper to taste shopping list
- 1 tsp creole seasoning shopping list
How to make it
- Cut squash in half, take out seeds and stringy part and lay on baking sheet
- Drizzle with olive oil salt and pepper and place in preheated 400 degree oven, bake for 40 minutes
- Dot with a 1/2 tsp butter on each piece and continue to cook another 10 minutes
- In skillet over med heat, brown ground beef
- Stir in mushrooms and cook until mushrooms are tender, about 4 minutes
- Stir in sauce and 1/2 cup cheese, lower heat and cover.
- Cook sauce 5 minutes or until warmed through
- Remove squash from oven and allow to sit 5 minutes
- Using fork, scrape squash, it will resemble spaghetti noodles, place in bowl and drizzle with melted butter, sprinkle with creole seasons.
- Add 1/2 cup of Parmesan cheese and toss
- Plate desired amount of squash on plate, top with sauce and sprinkle additional cheese on top
