Turkey Muffins

- 1/3 to 1/2 cup wild rice - recommended: Wild Harvest (online catalog) shopping list
- 2 cloves garlic shopping list
- 1/2 - 1 leek or other mild onion shopping list
- 1-1/2 to 2 tsp salt shopping list
- 1 egg shopping list
- 2lb (1kg) ground turkey (not all-white) shopping list
How to make it
- MUFFINS:
- Heat oven to 350 F (180 C). Grease 18 muffin cups.
- Rinse wild rice with warm tap water in fine sieve. Parboil rice for 10 minutes total (if using Wild Harvest - if not, cook rice completely). Drain rice and run cold water over to stop it from cooking further.
- Mince garlic and leek or onion.
- Combine all ingredients, adding meat last.
- Fill muffin cups to a 1/4-inch from tops, pressing down middles.
- Cook 15-20 minutes, turning pan halfway through. They won't look done when you take them out, so be careful not to let them get too dry. I usually take one out and cut it open to check doneness.
- Let muffins sit in pan on top of stove for about 10 minutes to soak juices back up - otherwise they'll be dry.
- PATTIES:
- Follow directions for muffin ingredients, but make into patties and fry in small amount of oil on stovetop.
- LOAF:
- Do not cook rice, unless using the hard kind.
- Heat oven to 350 F (180 C). Grease 2qt baking dish.
- Mix all ingredients and spread in prepared dish.
- Bake for 1 hour and 10-15 minutes.
- Let sit 15 minutes on top of stove.
