How to make it

  • MUFFINS:
  • Heat oven to 350 F (180 C). Grease 18 muffin cups.
  • Rinse wild rice with warm tap water in fine sieve. Parboil rice for 10 minutes total (if using Wild Harvest - if not, cook rice completely). Drain rice and run cold water over to stop it from cooking further.
  • Mince garlic and leek or onion.
  • Combine all ingredients, adding meat last.
  • Fill muffin cups to a 1/4-inch from tops, pressing down middles.
  • Cook 15-20 minutes, turning pan halfway through. They won't look done when you take them out, so be careful not to let them get too dry. I usually take one out and cut it open to check doneness.
  • Let muffins sit in pan on top of stove for about 10 minutes to soak juices back up - otherwise they'll be dry.
  • PATTIES:
  • Follow directions for muffin ingredients, but make into patties and fry in small amount of oil on stovetop.
  • LOAF:
  • Do not cook rice, unless using the hard kind.
  • Heat oven to 350 F (180 C). Grease 2qt baking dish.
  • Mix all ingredients and spread in prepared dish.
  • Bake for 1 hour and 10-15 minutes.
  • Let sit 15 minutes on top of stove.
