How to make it

  • Saute Leeks, onions, and potatoes in butter or oil for 5 minutes. Add the broth and bring to a boil, then reduce the heat and simmer on low, covered, for 15 - 20 minutes. Let cool a bit.
  • Transfer the mixture into a food processor or blender and process until smooth ( you may need to blend in 2 batches per size of blender or processor )
  • Pour back into a clean sauce pan and add your salt and pepper. Reheat the soup.
  • Ladle into bowls and drizzle a little cream on top in a pretty design. ( I made this for Easter once and drizzled a cross on top with the cream and served it with a nice soda bread. ) ( Vegans leave off the cream ) :)
