Leek And Potato Soup

- 5 TBLS - butter (vegetarian) or olive oil (vegan) shopping list
- 1 Onion - chopped shopping list
- 4 Small tender Leeks, diced shopping list
- 3 Large potatoes, cubed shopping list
- 4 Cups - Vegetable broth shopping list
- Salt and Pepper to taste ( I find extra pepper a plus ) shopping list
- 1 Cup Cream ( Vegans omit cream ) shopping list
How to make it
- Saute Leeks, onions, and potatoes in butter or oil for 5 minutes. Add the broth and bring to a boil, then reduce the heat and simmer on low, covered, for 15 - 20 minutes. Let cool a bit.
- Transfer the mixture into a food processor or blender and process until smooth ( you may need to blend in 2 batches per size of blender or processor )
- Pour back into a clean sauce pan and add your salt and pepper. Reheat the soup.
- Ladle into bowls and drizzle a little cream on top in a pretty design. ( I made this for Easter once and drizzled a cross on top with the cream and served it with a nice soda bread. ) ( Vegans leave off the cream ) :)
