How to make it

  • Use a large heavy based saucepan.
  • Melt butter and mix with olive oil
  • Fry onions and potatoes until lightly golden.
  • Add grated zucchini and cherries
  • Keep frying and keep lid off to dry the mixture out
  • Stir for about 5 minutes.
  • Add spinach and cover.
  • Turn off stove and wait for 10 minutes
  • Stir through the cheese and mix well
  • Eat as is or use as a pie or pastie filling
