Lentil Snacks

- 1 cup red lentils shopping list
- 2 1/2 cups water (+ 1/4 cup water if using millet) shopping list
- 1/2 cup bulgur (or 1/3 cup millet) shopping list
- 1 tbsp tomato paste shopping list
- 1/2 tsp red pepper flakes shopping list
- 1 onion shopping list
- 2 tbsp olive oil shopping list
- 2 cloves garlic shopping list
- 1 1/2 tsp cumin shopping list
- 3/4 tsp turmeric (optional) shopping list
- 2/3 tsp pepper shopping list
- 2/3 tsp salt shopping list
How to make it
- 1. Put lentils, water, and red pepper flakes in a pot.
- 2. If using millet, add millet and simmer until well cooked. If using bulgur, simmer 20 minutes until lentils are mushy but still wet.
- 3. Add tomato paste, bring to a boil, then remove from heat.
- 4. If using bulgur, add bulgur.
- 5. Cover and let stand 30 minutes.
- 6. Chop onion and garlic finely, and saute in oil until golden.
- 7. Add cumin, turmeric, pepper, and salt, and cook 2 more minutes.
- 8. Mix all ingredients together and form into cookie sized patties on baking sheet. Bake for 12 minutes at 350 F. Alternately, fry patties in a small amount of oil.
