How to make it

  • Clean and pat dry your turkey, removing the giblets, neck, and gravy packet, the "thermometer" and the leg truss. Always check the skin for left over feathers and quills.
  • Preheat oven to 350 deg. F
  • Chop fine approximately 1 tbsp. each of the rosemary, parsley and thyme reserving the rest. mix the chopped herbs with half of the softened butter.
  • Add melted butter to injector.
  • Slice the apple into chunks
  • Slice the onion into chunks
  • Tie reserved herbs into a bouquet garni with the bay leaves and sage leaves. Place into a sack made with the cheese cloth with the apple and onion.
  • Rub unused butter over entire turkey, place bouquet garni sack inside turkey cavity. Using your hand create a pocket between the skin and the breast meat then place the herb butter mixture inside the pocket covering as much of the breast meat as possible. Generously inject the melted butter into the breast meat. Tuck the wings in on them selves then make a slit just under the tail large enough o accept and hold the ends of the legs. See Photo
  • Join together by folding at the sides, two or three lengths of aluminum foil. Center the foil into a four to six inch deep roasting pan, place the turkey in the center and tent.
  • Place in oven for one hour at 350 Deg. F then reduce the temperature to 200 Deg. F until internal temp of the turkey breast reaches 185 Deg. F. Peel back foil turn broiler on medium until skin browns and crisps up.
  • recover turkey with foil, remove from oven and let rest 30-45 min before carving.
