How to make it

  • In a large skillet, brown the spam pieces in 2 T. oil and remove to a plate; keep warm.
  • Sauté the carrots, zucchini, onion and garlic until crisp tender in remaining oil in skillet - try not to add anymore.
  • Toss together linguini, vegetable mixture, reserved spam, parmesan cheese, 1 tablespoons olive oil, and lemon juice until well coated. Serve immediately.

  • Leftover Tip:
  • Frittata made from the primavera. Heat, add 3 eggs; cook on low until eggs are almost done.
  • Top with tomato slices and Emanthaler cheese and broil until top begins to brown. (or put in oven to finish)
  • Note: Fast and easy and very tasty.
  • On days I want easy and fast, I’ll make half recipe of the primavera and use the other half of spam for Spam Victory Buns for sandwich later (we eat our main meal mid-day)

    My husband LOVES Spam on anything. This is definitely a to-do recipe with the frozen zucchini from this summer! We enjoy German wines, will have to find Chateau St. Michelle's Gewurztraminer when we visit Springfield again.
