Ingredients
  • * 2½ pounds cubed beef
  • * 2 Tablespoons oil
  • * Salt and pepper
  • * Flour
  • * 1½ cups water (or beef bouillon)
  • * 2 sprigs parsley and
  • * 1 bay leaf, tied together
  • * Pinch thyme
  • * ½ pound small onions
  • * ¾ pound (2 cups) carrots (sliced)
  • GARNISH:
  • * 1 pound green beans, cooked in boiling salted water

Directions
  1. PREPARATION AND COOKING: Sprinkle the meat with salt and pepper and flour. Brown the meat with 2 Tablespoons oil in a heavy saucepan. Add sufficient water (or beef bouillon) to cover the meat, salt and pepper and the herbs. Cover the pan and cook slowly for 1½ to 2 hours. Add the onions and sliced carrots. Cover and cook for another hour. When tender, skim off the fat.
  2. TO SERVE: Remove parsley and the bay leaf. Arrange the meat and vegetables in a deep serving dish. Strain sauce over the meat and garnish with the green beans.
