Swedish Rye Cookies

- 1 cup rye flour shopping list
- 1 cup spelt flour shopping list
- 1 tbsp psyllium husk shopping list
- 1 tsp cardamom shopping list
- ½ tsp salt shopping list
- ½ cup cream cheese, room temperature shopping list
- ½ cup unsalted butter, room temperature shopping list
- ½ cup sugar, sifted shopping list
- 1 tsp vanilla shopping list
- 3-4 tbsp water shopping list
- large grain sugar (for sprinkling) shopping list
How to make it
- In a small bowl, whisk together the flours, psyllium, cardamom and salt. Set aside.
- In a large bowl, cream together the cream cheese, butter and sugar.
- Beat in vanilla until well blended, then add flour mixture and combine, adding just enough water to make a cohesive (relatively stiff) dough.
- Wrap in plastic and refrigerate overnight.
- Heat the oven to 350F and line cookie sheets with parchment.
- Roll the dough out to about 1/4" thick, and cut into shapes.
- Sprinkle each cookie with sugar.
- Bake for 8-9 minutes, until set and slightly golden at the edges.
- Cool on the sheets.
