How to make it

  • Preheat oven to 350F and line a muffin tin with paper liners.
  • In a bowl, whisk together flours, starches, guar gum, custard powder, spices, baking powder, baking soda and salt. Set aside.
  • In large mixing bowl, combine applesauce, rice milk, oil, sugars, Truvia and extracts.
  • Mix in shredded apple.
  • Add flour mixture and stir until well combined.
  • Bake for 17-19 minutes, or until toothpick inserted in center comes out clean.
  • Cool in pans for 5 minutes, then invert onto cooling rack to cool completely.
