Quinoa Avocado Spinach Power Salad

- 1 cup dry quinoa shopping list
- 2 avocados shopping list
- 10 oz bag baby spinach shopping list
- 8 oz cherry or roma tomatoes, cut into large chunks shopping list
- 3 green onions shopping list
- 1 chopped cucumber (optional) shopping list
- Dressing shopping list
- 2 cloves garlic, minced shopping list
- 2 Tbsp red wine vinegar shopping list
- 2 Tbsp olive oil shopping list
- 1/8 tsp salt shopping list
- After tasting, add garlic vinegar and the juice of 1 lime shopping list
How to make it
- Cook the quinoa according to package directions.
- Meanwhile, make the dressing by whisking dressing ingredients together in a small bowl. Set aside.
- Roughly chop the spinach and set aside in a large bowl.
- Slice green onions, halve the cherry tomatoes and dice the avocado.
- When quinoa is done cooking, add it to the spinach bowl and toss. The heat from the quinoa will lightly wilt the spinach.
- Add the green onions, tomatoes and dressing. Stir to combine.
- Add the avocado and lightly toss.
- Serve immediately or refrigerate for flavors to blend.
