English Muffin Bread

- Vegetable shortening, as needed shopping list
- Cornmeal, as needed shopping list
- 6 C Unsifted, all-purpose flour (approximate; divided) shopping list
- 2 Pkgs active dry yeast shopping list
- 1 Tbsp Sugar shopping list
- 2 Tsp Salt shopping list
- 1/4 Tsp baking soda shopping list
- 2 C Milk shopping list
- 1/2 C Water shopping list
How to make it
- Grease two 8 1/2" x 4 1/2" loaf pans.
- Sprinkle the pans with the cornmeal, tilting the pans around, if necessary, to distribute the cornmeal well.
- In a large bowl, combine 3 cups of the flour, the yeast, the sugar, the salt and the baking soda.
- In a saucepan, combine the milk and water and heat until the mixture is 120F.
- Add the milk mixture to the dry mixture and beat well.
- Gradually add some of the remaining flour until a stiff batter is formed.
- Spoon half of the batter into each prepared pan.
- Sprinkle the top of each loaf with cornmeal.
- Cover the loaves with towels.
- Let rise in a warm place for 45 minutes.
- Bake at 400F for 25 minutes.
- Remove from the pans immediately and cool on wire racks.
