How to make it

  • Grease two 8 1/2" x 4 1/2" loaf pans.
  • Sprinkle the pans with the cornmeal, tilting the pans around, if necessary, to distribute the cornmeal well.
  • In a large bowl, combine 3 cups of the flour, the yeast, the sugar, the salt and the baking soda.
  • In a saucepan, combine the milk and water and heat until the mixture is 120F.
  • Add the milk mixture to the dry mixture and beat well.
  • Gradually add some of the remaining flour until a stiff batter is formed.
  • Spoon half of the batter into each prepared pan.
  • Sprinkle the top of each loaf with cornmeal.
  • Cover the loaves with towels.
  • Let rise in a warm place for 45 minutes.
  • Bake at 400F for 25 minutes.
  • Remove from the pans immediately and cool on wire racks.
