Fudgy Chocolate Wafers

- 5 tbsp coconut oil shopping list
- ½ cup unsweetened cocoa shopping list
- ½ cup granulated sugar shopping list
- ⅓ cup packed brown sugar shopping list
- ⅓ cup plain coconut or low-fat dairy yoghurt shopping list
- 1 tbsp vanilla extract shopping list
- 1 cup whole wheat pastry flour shopping list
- ¼ tsp baking soda shopping list
- pinch cloves shopping list
- pinch salt shopping list
- 18 dark chocolate wafers, for topping shopping list
How to make it
- Preheat oven to 350°F and line baking sheets with parchment.
- Melt coconut oil in the microwave, then stir in cocoa powder and sugars and microwave 30 seconds longer (mixture will resemble coarse sand).
- Add yoghurt and vanilla, stirring quickly to combine.
- Add flour, baking soda, cloves and salt, stirring until combined.
- Drop spoonfuls 2” apart onto baking sheets and press 1 wafer into the centre of each. (For thicker cookies, shape dough into balls on the cookie sheet and chill 2-24 hours before baking)
- Bake 10 minutes, until almost set.
- Cool on pans 15 minutes, then transfer to wire racks.
