Cinnamon Raisin Blondies

- ½ cup salted butter, melted shopping list
- 1 ½ tbsp cinnamon shopping list
- 2 tbsp honey shopping list
- 2 tbsp Goldschläger (or other cinnamon schnapps) shopping list
- ¾ cup lightly packed dark brown sugar shopping list
- 1 egg shopping list
- 3 tbsp non-fat Greek yoghurt shopping list
- 1 tbsp vanilla shopping list
- pinch Kosher salt shopping list
- ¾ cup spelt flour shopping list
- ¼ cup chickpea flour shopping list
- ¼ tsp baking powder shopping list
- 2 tbsp maca powder shopping list
- ½ cup sultana raisins shopping list
How to make it
- Heat oven to 350F and line an 8” or 9" square pan with parchment paper.
- Whisk together the butter, cinnamon, honey, Goldschläger and brown sugar.
- Add egg, yoghurt, vanilla and salt, blending well.
- Add the flours, baking powder and maca powder, blending to incorporate well.
- Fold in the raisins.
- Scrape into the pan and smooth the top.
- Bake for 25 minutes. Cool completely on a rack before cutting.
