How to make it

  • Taste the butter. Find out what you think should taste better.
  • Melt the butter in microwave or mid-heat saucepan.
  • Mix with whole milk.
  • Churn, blend, process, shake or beat until it turns back into butter.
  • Strain away liquid. You can save it for buttermilk recipes.
  • Wash in cold or icy water.
  • Press out remaining liquid with cheesecloth.
  • Flatten the butter.
  • Reshape it so the remaining liquid leaves.
  • Add what you thinks shall taste better. (eg. herbs, garlic, honey, salt, seasalt, etc.)
  • Store.

    I think you can add a lot of things to butter if you just leave it out and let it soften first. We do that every year and add fresh herbs to it until it is completely green. Then we rub it under the turkey breast, anchor the skin in place, and let it cook. It keeps the turkey moist.
