How to make it

  • Preheat oven at 350 degrees. On a cookie sheet add the pine nuts drizzle with olive oil and bake for 5 minutes.
  • In a food processor or blender, add the basil leaves, garlic cloves, kosher salt, black pepper, up roasted pine nuts, parmesan cheese, pecorino or romano cheese. Blend until well incorporated. Add olive oil and pluse until smooth.
  • Cook the tortellini according to the directions. Drain, and rinse with cold water to stop the cooking then set aside.
  • Brown off the hamburger meat, and then drain.
  • Add the tortellini to a large pot, add the pesto sauce mix until well combined. Add the hamburger meat.
  • In the same blender or food processor as the pesto sauce add the andoullie sausage and roasted red bell pepper. Pluse until well blended. Add mixture to the tortellini mixture.
  • Add the spaghetti sauce to the tortellini. Rinse out jars or cans with beer.
  • In a large casserole dish add half the tortellini mixture, add the provolone cheese, then the rest of the tortellini mixture. Then add the shredded mozzarella cheese.
  • Bake for about an hour and a half, until the cheese is melted and browned on top.
  • Take our of the oven and let it rest for 10-15 minutes. Then serve and enjoy.
