Cabbage-apple Salad With Tahini Ginger Dressing

- 4 cups Shredded Red cabbage shopping list
- 1 medium red onion shopping list
- 1 serving apple shopping list
- 1/2 cup Dried Black Currants shopping list
- 1/2 cup Pecans, chopped shopping list
- 3 tsp Salt shopping list
- 1/4 cup Tahini shopping list
- 3/4 cup Orange Juice shopping list
- 4 Lemon Wedge Juice, Raw shopping list
- 1 tbsp Extra Virgin Olive Oil shopping list
- 1 tbsp Honey Raw shopping list
- 2 tbsp Garlic shopping list
- 1 tbsp Fresh Ginger Root shopping list
- 1 dash Pepper, Black, to taste shopping list
How to make it
- For the dressing:
- 1. Combine tahini, orange and lemon juice, olive oil, honey, garlic, ginger, 1 teaspoon of salt and pepper in a blender or food processing and pulse until smooth.
- To prepare the salad:
- 1. Place strips of cabbage into a large bowl.
- 2. Add salt and massage into cabbage with hands until well combined (to wilt the cabbage a bit for easier digestion). Let this sit for 5 minutes.
- 2. Mix the onion, apple and currants with the cabbage.
- 3. Pour dressing over salad and combine thoroughly.
- 4. Garnish with pecans.
- 5. This salad is best served chilled. Store in fridge for up to 3 days.
