How to make it

  • For the dressing:
  • 1. Combine tahini, orange and lemon juice, olive oil, honey, garlic, ginger, 1 teaspoon of salt and pepper in a blender or food processing and pulse until smooth.
  • To prepare the salad:
  • 1. Place strips of cabbage into a large bowl.
  • 2. Add salt and massage into cabbage with hands until well combined (to wilt the cabbage a bit for easier digestion). Let this sit for 5 minutes.
  • 2. Mix the onion, apple and currants with the cabbage.
  • 3. Pour dressing over salad and combine thoroughly.
  • 4. Garnish with pecans.
  • 5. This salad is best served chilled. Store in fridge for up to 3 days.
