Freezer Breakfast Sandwiches - Canadian Bacon And Cheddar

- 24 English muffins, split and toasted shopping list
- 18 eggs, beaten shopping list
- 3/4 cup milk shopping list
- 1-1/2 tsp. salt shopping list
- 3/4 tsp. pepper shopping list
- 8 ounces cheddar cheese, grated shopping list
- 24 slices Canadian bacon shopping list
How to make it
- Toast English muffins under broiler.
- Preheat oven to 350° F.
- Beat eggs and combine with milk, salt and pepper.
- Pour egg mixture into well greased (or parchment lined) jelly roll pan,
- Sprinkle grated cheese evenly over egg mixture and bake 20-22 minutes, or until firm in center.
- Cool and cut into 24 even squares (4 rows by 6 rows).
- Place Canadian bacon and egg square on one half of muffin, then top with the other half. Lay out on trays to freeze for approximately one hour, then wrap individually in paper towels and store in zippered storage bags for freezing.
- To heat, place paper-towel wrapped sandwiches in the microwave for 1-2 minutes, depending on microwave power.
