Tex-mex Black Bean Salad

- 1 can black beans, rinsed and drained shopping list
- 1 can kidney beans, rinsed and drained shopping list
- 1 can cannellini beans, rinsed and drained shopping list
- 1 can whole kernel corn, rinsed and drained, or 10oz. frozen corn thawed shopping list
- 1 red bell pepper, diced (yellow and or orange will work just fine) shopping list
- 1 green bell pepper, diced shopping list
- ¼ cup chopped fresh cilantro shopping list
- 3 cloves garlic, minced shopping list
- 1 red onion, diced shopping list
- ½ cup olive oil shopping list
- ½ cup red wine vinegar shopping list
- 2 Tablespoons fresh lime juice shopping list
- 1 Tablespoon fresh lemon juice shopping list
- 1 teaspoon salt shopping list
- 2 teaspoons ground cumin shopping list
- 2 teaspoons chili powder shopping list
- ½ teaspoon black pepper shopping list
- 2 dashes hot sauce shopping list
- 1 teaspoon Mrs. Dash Southwest Chipotle shopping list
- 1 teaspoon Mrs. Dash Fiesta Lime shopping list
How to make it
- 1. In a large bowl, combine beans, bell peppers, corn, and onion.
- 2. In a small bowl whisk together all other ingredients until well combined.
- 3. Pour dressing over bean mixture and mix well. Store in refrigerator for at least 1 hour before serving.
