Sautéed Cauliflower With Currants And Nuts

- 1 head cauliflower chopped into small pieces (almost the size you would use for hash) shopping list
- ¼ cup diced shallots shopping list
- 2 tablespoons butter, or 1 tablespoon butter and 1 tablespoon olive oil shopping list
- 2 to 3 tablespoons currants, or minced dates, Craisins, Pomegranate seeds etc. shopping list
- 1/8 cup pine nuts, chopped walnuts, sliced almonds etc… shopping list
- 2 tablespoons agave nectar or 1 tablespoon honey shopping list
- Salt and pepper to taste shopping list
How to make it
- Chop cauliflower, and shallots. Add butter to skillet over medium heat. Let butter melt and pan get hot; add cauliflower; DON’T STIR! Let it set to caramelize, this will take about 3 to 5 minutes; add shallots, Then stir. Add salt, pepper, currants, nuts, and agave nectar or honey; stir, and let set again to caramelize for another 3 to 5 minutes. Serve warm
