Salmon With Bow Ties And Tarragon Mustard Sauce

- 8 ounces fresh pasta such as bowtie or linguine, shopping list
- 1 tablepoon olive oil shopping list
- ½ cup onion, chopped shopping list
- 1 tablespoon chopped fresh tarragon or 1 teaspoon dried tarragon shopping list
- 1 tablespoon chopped fresh parsley or 1 teaspoon dried parsley shopping list
- ¼ cup dry chardonnay shopping list
- 1 cup whipping cream or half and half shopping list
- 2 tablespoons stone ground, whole grain or Dijon mustard shopping list
- 1/3 to 1/2 cup cooked peas, diced broccoli, or chopped spinach shopping list
- 3 to 6 ounces cooked lightly seasoned salmon or smoked salmon shopping list
- 1/3 cup freshly grated or shredded Parmesan cheese, plus extra for garnish shopping list
How to make it
- 1. Cook pasta and drain.
- 2. While pasta is cooking, heat oil in 10 inch skillet over medium heat. Cook onion, tarragon and parsley in oil about 5 minutes, stirring frequently, until onion is tender. Stir in wine. Cook; uncovered about 4 minutes or until wine is gone. Stir in whipping cream and mustard. Heat to boiling; reduce heat. Simmer uncovered 5 to 10 minutes or until sauce is slightly thickened.
- 3. Add pasta, salmon and ¼ cup of the cheese to sauce in skillet; toss gently until pasta is evenly coated. Remove from heat. Sprinkle with extra cheese to serve.
- Note: I added an extra tablespoon of Dijon mustard. and used peas.
