Chinese Lemon Chicken

- 3tbsp Sunflower Oil shopping list
- 200g/7oz chicken breast/Thighs - shredded into strips shopping list
- 1 clove Garlic - thinly sliced shopping list
- 2½cm/1in piece fresh Ginger - thinly sliced shopping list
- 4 Spring Onions - finely sliced shopping list
- ½ Red Pepper - chopped shopping list
- 1 Italian Green Pepper - chopped shopping list
- 100g/3½oz button mushrooms - quartered shopping list
- 60g/2oz Mangetout (Snow Peas) or Green beans - chopped shopping list
- ½ Lemon - juice only shopping list
- Splashes Soy Sauce - to taste shopping list
- 2tsp Sesame Oil shopping list
- 1Pkt Straight to Wok Noodles - or normal Chinese egg noodles - cooked shopping list
How to make it
- Heat the wok until hot, add 1tbsp oil and, over a medium high heat, add the chicken and stir fry for some 3 minutes or so until just cooked through;
- Remove the chicken, drain on kitchen towel and set aside;
- Return wok to the heat and add the remaining oil;
- Add the peppers, onion, mangetout and mushrooms, stir and cook for some 3 to 4 minutes or so until just tender with the mushrooms still with bite;
- Add the garlic, ginger, lemon juice and soy sauce and, stirring continuously, cook for a minute or so;
- Tip in the noodles and the chicken and stir fry until both are heated through;
- Drizzle on the sesame oil, mix thoroughly and serve
